Shopping List
- 2 sticks (1 cup) softened butter
- ¾ cup brown sugar
- ¾ cup sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp baking soda
- ¾ tsp salt
- 2 ¼ cups flour
- 3 cups crushed White Cheddar popcorn plus one cup (about 4-b cups whole popcorn)
- ½ cup chopped Chipotle peanuts
- 1 cup chopped Heath Bars minis
Instructions
- Preheat oven to 350 and lined baking trays with parchment paper
- Beat together the sugars and butter until light and fluffy
- Add vanilla and eggs and beat to combine
- Add flour, baking soda and salt. Stir together
- Add 2 cups crushed popcorn, nuts and toffee. Stir together (mixture will be stiff)
- Roll about 2 teaspoons at a time into a ball and roll in the reserved popcorn
- Place on parchment lined sheets and bake 12-15 minutes until lightly browned.
- Let cool on tray for a minute and remove to racks to finish cooling
Makes about 5 dozen
