Shopping List

  • 2 sticks (1 cup) softened butter
  • ¾ cup brown sugar
  • ¾ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • ¾ tsp salt
  • 2 ¼ cups flour
  • 3 cups crushed White Cheddar popcorn plus one cup (about 4-b cups whole popcorn)
  • ½ cup chopped Chipotle peanuts
  • 1 cup chopped Heath Bars minis

 

Instructions

  1. Preheat oven to 350 and lined baking trays with parchment paper
  2. Beat together the sugars and butter until light and fluffy
  3. Add vanilla and eggs and beat to combine
  4. Add flour, baking soda and salt. Stir together
  5. Add 2 cups crushed popcorn, nuts and toffee. Stir together (mixture will be stiff)
  6. Roll about 2 teaspoons at a time into a ball and roll in the reserved popcorn
  7. Place on parchment lined sheets and bake 12-15 minutes until lightly browned.
  8. Let cool on tray for a minute and remove to racks to finish cooling

Makes about 5 dozen
