Serves: 6-8


  • 4 carrots, grated
  • 4 apples, peeled and grated
  • 4 tbsp. liquid coconut oil or coconut oil, melted
  • 4 tbsp. organic maple syrup
  • 1 tsp. cinnamon

Optional Toppings

  • unsweetened coconut flakes
  • pecans, chopped
  • raisins


  1. Place carrots and apples to a large mixing bowl.
  2. Add coconut oil, maple syrup, and cinnamon; stir until the salad is thoroughly coated.
  3. Add your favorite toppings and enjoy!
  4. Serve immediately or let marinate in the refrigerator overnight to enjoy the next day!
