Ingredients
Roasted Pears
- 2 large pears
- 2 oz. brie cheese, cut into small chunks
- 1 tbsp. honey
- 2 oz. toasted walnuts, chopped
- sprinkle of cinnamon
Raspberry Sauce
- 1 cup frozen raspberries
- 1/4 cup water
- 1 1/4 cup raspberry liqueur
- 1 tsp. vanilla
- 1/4 cup sugar
- 1 tbsp. cornstarch
Directions
- Preheat the oven to 350°F. Line a small baking sheet with a silicon baking mat.
- Slice the pears lengthwise and use a melon baller or spoon to remove the core.
- Sprinkle with cinnamon and brush lightly with honey.
- Bake pears at 350°F for about 10 minutes or until tender. Remove from the oven and stuff the holes with chunks of brie cheese. Return to the oven for a few minutes until the cheese has melted.
- Put all ingredients except cornstarch in a small saucepan for the raspberry sauce. Stir and cook over medium heat for about 10 minutes. Mix the cornstarch with 1 tbsp of water and add to the pan. Stir and cook for a minute or until it begins to thicken.
- Move the pear halves to serving plates, top with the raspberry sauce, and sprinkle with walnuts.
