Mango Salad

Serves: 4

Ingredients

Salad

  • 2 ripe mangoes, peeled and diced
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup fresh basil, chopped

Dressing

  • 3 tbsp lemon juice
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tbsp fresh ginger, minced
  • ¼ tsp red chili flakes
  • ¼ tsp salt

Directions

  1. In a large bowl, combine all salad ingredients and mix well.
  2. In a small bowl, whisk together all dressing ingredients until combined.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Serve and enjoy.
