  • 2 plums
  • 1/2 cup water
  • 1/2 cup sugar
  • 6 sprigs of thyme
  • Juice of a lemon

 

Instructions

  • Peel and chop plums.
  • Bring water and sugar to a boil remove and steep thyme and let cool.
  • Muddle plums with thyme simple syrup and lemon juice.
  • Shake and pour over ice.
  • Top with champagne or sparkling water.
