Loaded Chickpea Salad

Serves 12

Ingredients

Chickpea Salad

  • 1 can chickpeas, drained and rinsed
  • 1 English cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/2 cup Kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1 jalapeño, chopped
  • salt and pepper, to taste

Dressing

  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 tbsp. honey
  • 2 tsp. garlic, minced
  • 1 tsp. dried oregano

Directions

  1. Place all salad ingredients into a large bowl and combine.
  2. In a small bowl, combine all the dressing ingredients and whisk until combined.
  3. Add dressing to the salad bowl and toss gently to combine.

This salad will keep in the refrigerator for up to 3 days. Wait to put the dressing on until right before servings
