Ingredients
Chickpea Salad
- 1 can chickpeas, drained and rinsed
- 1 English cucumber, diced
- 2 cups cherry tomatoes, halved
- 1/2 red onion, diced
- 1/2 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 1 jalapeño, chopped
- salt and pepper, to taste
Dressing
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- 2 tbsp. honey
- 2 tsp. garlic, minced
- 1 tsp. dried oregano
Directions
- Place all salad ingredients into a large bowl and combine.
- In a small bowl, combine all the dressing ingredients and whisk until combined.
- Add dressing to the salad bowl and toss gently to combine.
This salad will keep in the refrigerator for up to 3 days. Wait to put the dressing on until right before servings
