Ingredients

  • 1 artisan flatbread
  • 1 tbsp. olive oil
  • 1 tsp. salt
  • 2-4 tbsp. apricot jam
  • 4 oz. plain goat cheese
  • 1 cup fresh blueberries
  • 2 tbsp. honey
  • 1/2 cup fresh mint leaves

Directions

  1. Preheat oven to 375°F.
  2. Spread the apricot jam across the flatbread evenly.
  3. Add crumbled pieces of goat cheese.
  4. Add a layer of blueberries.
  5. Brush crust with olive oil.
  6. Bake for 8-10 minutes.
  7. Drizzle honey, top with fresh mint, and add salt.
  8. Slice and Enjoy!
