Serves 6
Ingredients
- 6-8 oz. of cooked lobster, chopped
- 1 shallot, minced
- 2 garlic cloves, minced
- 8 oz. cream cheese, softened
- 8 oz. shredded cheddar cheese
- ¼ cup fresh parsley, chopped
- 1 tsp. paprika
- 1 tbsp. olive oil
- ½ cup sour cream
- tortilla chips, for dipping
Directions
- In a skillet over medium-high heat, add the olive oil.
- Saute the shallots and garlic until fragrant.
- In a mixing bowl, add lobster meat, shallot with garlic mixture, softened cream cheese, sour cream, half of the cheddar cheese and paprika. Mix together well.
- Once mixed add mixture to an oven safe dish.
- Top with remaining cheddar cheese and bake for 5-10 minutes or until the cheese is melted.
- Garnish with parsley and paprika.
- Serve with tortilla chips and enjoy!.
