Tofu Chili

Ingredients:

  • 2 14-oz packages firm tofu, FROZEN
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 Tbsp vegetable oil
  • 4 c kidney beans, canned
  • 28 oz can tomatoes, stewed or crushed
  • 2 tsp chili powder (more or less to taste)
  • 1 tsp cumin
  • 1 Tbsp vinegar
  • 1 tsp salt 1/4 tsp black pepper Tabasco sauce, if desired

Directions:

Thaw tofu. When thawed, press out the water and crumble (or cut) tofu into medium-sized chunks. Sauté onion and garlic in the vegetable oil. When onions are tender, add crumbled tofu and sauté another few minutes. In a large pot, combine all the ingredients and simmer for 1 hour.

Serves 8.
