
Combine sugar and cinnamon in small bowl, reserve 1 tbsp. of this mixture. Spray large nonstick skillet with cooking spray, add apples. Cook over medium heat until tender, stirring occasionally. Remove from heat; stir in remaining sugar-cinnamon mixture, raisins and rum extract. Top each tortilla evenly with cheese and spread apple mixture over top. Spray nonstick skillet with spray and heat over medium heat. Place tortilla in skillet (filling side up) and heat for 1 minute. Remove from heat and quickly fold in half. Cover and keep warm while preparing remaining tortillas. To serve, cut into 3 wedges and sprinkle with reserved cinnamon-sugar mixture.
