Southwestern Corn
A colorful way to get in some veggies.
Shopping List:
- corn
- bell pepper
- onion
- Country Crock soft margarine
- pepper
Ingredients
- 5 medium ears of corn, cleaned with kernels removed
- 1 red or green bell pepper
- 1/4 cup of onion, chopped
- 2 teaspoons Country Crock soft margarine
- 1/4 teaspoon pepper
Directions:
Sauté pepper and onions in Country Crock margarine until soft. Add corn and pepper. Cook over low heat for 10 minutes until corn is tender. Makes 6 servings.
