Southwestern Corn

A colorful way to get in some veggies.

Shopping List:

  • corn
  • bell pepper
  • onion
  • Country Crock soft margarine
  • pepper

Ingredients

  • 5 medium ears of corn, cleaned with kernels removed
  • 1 red or green bell pepper
  • 1/4 cup of onion, chopped
  • 2 teaspoons Country Crock soft margarine
  • 1/4 teaspoon pepper

Directions:

Sauté pepper and onions in Country Crock margarine until soft. Add corn and pepper. Cook over low heat for 10 minutes until corn is tender. Makes 6 servings.
