Green Beans with Tomatoes

Green Beans with Tomatoes

Ingredients:

  • 1 pound bag of green beans, whole or cut, trimmed
  • 2-3 ripe tomatoes, diced
  • 1 clove garlic, chopped
  • 1/4 cup onion, chopped
  • 1 tablespoon Bertolli extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • Salt and freshly ground pepper to taste
  • 1/4 t Garlic powder
  • 1/2 C Water
  • 1 T Laura Lynn soy sauce

Directions:

Place beans in a large skillet with about an inch of water. Steam, covered for 5-7 minutes over moderate heat, or until bright green and tender-crisp. Drain.

Heat oil in skillet and add garlic and onion. Saute, stirring until the garlic turns golden. Add the tomatoes and green beans and cook for 2-3 minutes. Transfer to a serving bowl, toss in Bertolli olive oil, vinegar and season to taste.
