Pineapple & Avocado Salad
Ingredients:
- 2 cups fresh pineapple
- 3/4 cup sliced avocado)
- 1 cup thinly sliced red onion
- 1 TBSP chopped fresh cilantro
- freshly ground black pepper
- 3 TBSP fresh lime juice
- 1 tsp Mazola oil
- 1/8 tsp salt
- 1 garlic clove, mince
Directions:
Dressing: Combine cilantro,lime juice, oil, salt and garlic in a small jar with a lid and shake. Place pineapple on plate and top with avocado and slices of onion. Sprinkle with black pepper and drizzle with dressing. Nutritional content - 4 servings - 110 calories; 5 grams fat; 15 grams carb; 2 grams fiber; 80 mg sodium
Make it into a meal by adding slices of grilled chicken or flank steak.
