For 2 people
- 2 blood oranges, peel and section ( reserve 1/2 of 1 orange for dressing) - or navel oranges
- 1 pink grapefruit, peeled and sectioned (reserve 1/4 for dressing)
- 1/2 fennel bulb, washed and julienned
- 1/4 cup(s) toasted almond slices
Crimson Citrus & Fennel Salad Directions
- Cut orange and grapefruit into fingertip sized pieces and put in salad bowl along with other ingredients.
- Make up dressing in separate bowl:
- Juice of 1/2 of orange
- Juice of 1/4 grapefruit
- 1/2 tsp fresh ginger, grated
- 1/4 tsp dried ginger
- 1 TBSP honey
- 1/3 cup golden raisins
- Add dressing to citrus and fennel and stir.
