  • 2 medium Ears of corn, husks and silk removed
  • 1/4 cup(s) Black beans, rinsed and drained
  • 1 small Tomato, small dice
  • 1 small Jalapeno pepper, finely chopped
  • 2 tablespoon(s) Green bell pepper, small dice
  • 2 tablespoon(s) Red bell pepper, small dice
  • 1/4 cup(s) Jicama, peeled, small dice
  • 2 tablespoon(s) Green onions, chopped
  • 1 tablespoon(s) Vegetable oil
  • 2 tablespoon(s) Fresh cilantro, chopped
  • 1 clove Garlic, minced
  • 2 teaspoon(s) Fresh lime juice
  • Dash Ground cumin
  • 1/4 teaspoon(s) Kosher salt

Black Bean and Corn Salad Directions

  1. Grill corn over medium heat, turning frequently, until corn is golden brown, about 10-15 minutes. Remove corn from grill and let cool; cut corn from cob. 
  2. In a medium bowl, combine all ingredients and mix until well blended.
