Zesty Zucchini Bake

Zesty Zucchini Bake

Ingredients:

  • 1/2 Cup chopped onion
  • 1 Clove garlic, minced
  • 3 Cups grated zucchini
  • 1 Tablespoon Bertolli olive oil
  • 1 1/4 Cup Quaker rolled oats
  • 1/2 Cup shredded low-fat Borden
  • Mozzarella cheese
  • 1/4 Better'n Eggs egg substitute
  • 1/2 Teaspoon dried basil
  • 7/8 Teaspoon black pepper
  • 1/3 Cup Ragu Light Roasted Garlic Primavera or Tomato & Basil Pasta Sauce

Directions:

Preheat oven to 375 degrees. Coat 8x12 inch glass baking dish with vegetable cooking spray. Saute onion and garlic in olive oil in a medium size frying pan until tender. In a medium sized mixing bowl combine onion, garlic, zucchini, oats, cheese (1/4 cup), basil, and pepper. Mix well. Spread mixture into baking dish. Spread tomato sauce evenly over top. Sprinkle remaining cheese over top. Bake in oven for 30 minutes or until heated through.

Makes 8 servings.
