Lemon Poached Wild Cod Fillets
(4 ounce) wild cod filets
1 quart water
3 tablespoons fresh lemon juice
1 small onion, sliced and separated into rings
1 bay leaf
3 whole peppercorns
Salt and pepper to taste
Lemon Butter Sauce:
3 tablespoons reduced fat margarine
3 tablespoons lemon juice
zest of 1 lemon
Minced parsley
Combine water, lemon juice, onion, bay leaf, and peppercorns in a large nonstick skillet. Bring to boil and simmer for 20 minutes. Add cod, salt and pepper to taste and simmer covered for 5-10 minutes or until fish flakes easily with fork. Remove cod and garnish with sliced onions and parsley. For the sauce, melt margarine, add lemon juice and lemon zest and pour sauce over fish.
