Vegetable Frittata

Here's a low calorie AND low carb breakfast or dinner idea!

Adapted from The New Family Cookbook for People with Diabetes

Ingredients:

  • 1 small onion, thinly sliced
  • 1 tsp Country Crock margarine
  • 1 cup zucchini, cut into 1/4 inch slices
  • 1 boiled red potato, peeled and sliced
  • 1 small red pepper, sliced into thin strips
  • 3 large eggs, lightly beaten
  • 3 egg whites, slightly beaten
  • 1/4 tsp salt
  • 1/8 tsp ground pepper
  • 1/4 cup shredded reduced fat cheese (Monterey jack or other)
  • pinch of paprika

Directions:

  1. Preheat oven to 450 degrees. Put margarine into pie plate and place in oven to melt.
  2. Arrange onion slices on top of margarine and cook in hot oven for 5 minutes.
  3. Remove from onion and arrange zucchini, peppers, and potatoes on top of onion and sprinkle on cheese.
  4. In a medium bowl, combine whole eggs and egg whites, salt, and pepper. Pour mixture over cheese and sprinkle with paprika.
  5. Bake for 12-15 minutes or until eggs are set in the middle.
  6. Slice into 4 equal portions. Can be served hot or cold.
