Vegetable Frittata
Here's a low calorie AND low carb breakfast or dinner idea!
Adapted from The New Family Cookbook for People with Diabetes
Ingredients:
- 1 small onion, thinly sliced
- 1 tsp Country Crock margarine
- 1 cup zucchini, cut into 1/4 inch slices
- 1 boiled red potato, peeled and sliced
- 1 small red pepper, sliced into thin strips
- 3 large eggs, lightly beaten
- 3 egg whites, slightly beaten
- 1/4 tsp salt
- 1/8 tsp ground pepper
- 1/4 cup shredded reduced fat cheese (Monterey jack or other)
- pinch of paprika
Directions:
- Preheat oven to 450 degrees. Put margarine into pie plate and place in oven to melt.
- Arrange onion slices on top of margarine and cook in hot oven for 5 minutes.
- Remove from onion and arrange zucchini, peppers, and potatoes on top of onion and sprinkle on cheese.
- In a medium bowl, combine whole eggs and egg whites, salt, and pepper. Pour mixture over cheese and sprinkle with paprika.
- Bake for 12-15 minutes or until eggs are set in the middle.
- Slice into 4 equal portions. Can be served hot or cold.
