Sirloin Fajitas with Mango Salsa

Sirloin Fajitas with Mango Salsa

Ingredients:

  • 1/3 C Teriyaki sauce
  • 1/3 C of pineapple juice
  • 1/3 C honey
  • 4 minced garlic cloves
  • Black pepper
  • 1 Tbsp. Filippo Berio Olive oil
  • 1 mango, chopped
  • 1 avocado
  • 1 tomato, chopped
  • 5 green onions, chopped
  • 1/2 C of cilantro, chopped
  • 2 jalapeno peppers, chopped
  • Juice of 1 lime
  • 1-1/2 Lbs. of sirloin steak (or chicken breast)
  • 12 flour tortillas

Directions:

Combine first five ingredients (teriyaki sauce through Filippo Berio olive oil) to create marinade. Reserve and refrigerate 1/4 cup of the marinade for basting. Marinate meat in remaining marinade for 2-6 hours (the longer the more flavorful). Combine mango salsa ingredients (mango, avocado, tomato, green onion, cilantro, jalapeno peppers, and lime juice) and mix well. Remove steak (or chicken) from marinade (discard marinade) and broil or barbecue. Use the reserve marinade to baste. Carve/slice steak or chicken into thin slices. Place in center of heated flour tortillas, top with mango salsa, roll up and enjoy!

Serves 6
