Just 2 Good Grilled Shrimp & Vegetable Kebobs

Shopping List:

  • Just 2 Good Italian
  • Salad Dressing
  • shrimp
  • onions
  • cherry (or grape) tomatoes
  • mushrooms
  • red or green peppers

Ingredients:

  • 1-1/2 C Wishbone Just 2 Good Italian Salad Dressing
  • 2 Lbs. large shrimp, peeled and deveined
  • 1 Vidalia onion, peeled and cut into chunks
  • 1 Container cherry (or grape) tomatoes, rinsed
  • 1/2 Lb. large white mushrooms, cleaned with stems removed
  • 1 Lb. red or green peppers cut into chunks

Directions:

Marinate shrimp in 1 cup of salad dressing in refrigerator for at least 1 hour. Discard this dressing or bring to a boil before using to marinate. Thread shrimp and vegetables on to separate metal skewers or wooden skewers
that have been soaked in water. Grill vegetables over medium-low flame for 10 minutes on each side or until tender. Baste with fresh marinade while grilling. Grill shrimp for 5 minutes on each side, baste while grilling. Serve over Uncle Ben's rice or cous cous.
