Tim's Grouper Thumbs with Dill Mayonnaise
Serves 4
Ingredients:
- 1 Lb grouper
- 1-2 sleeves - 24-48 saltine crackers, crushed
- 2 whole eggs
- Mazola canola oil for frying
Sauce
- 1/2 cup mayonnaise
- juice of 1/2 lime
- 1 tsp. dried dill
- 2 cloves garlic, crushed or pressed
Directions:
Mix all ingredients for sauce in a bowl and chill in refrigerator. Cut grouper into finger or thumb -sized pieces. Put saltines into bowl. Beat eggs and put into bowl. Dip grouper into egg and then roll in saltine crumbs and set aside. Heat oil in large frying pan and lightly fry grouper in oil (about 2 minutes on each side). Transfer to plates lined with paper towels. Serve immediately with sauce.
