Raisin Rice Pudding – Adapted from New Family Cookbook for People with Diabetes
Ingredients:
- 2 large eggs, slightly beaten or ½ cup egg substitute
- 2 cups Uncle Ben’s cooked rice
- 1 ½ cup Laura Lynn Super Calcium Skim Delux Milk
- 2 TBSP sugar (or equivalent in Splenda – will reduce calorie and carbohydrate amount)
- ½ cup Sun Maid golden raisins
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp salt
Directions:
Preheat oven to 350 degrees. Spray a baking dish with nonstick spray. Combine all ingredients in baking dish and stir gently. Put filled dish into larger shallow pan with 1 inch of water to create water bath. Bake for 45 minutes or until inserted knife comes out clean. Serve warm or chilled.
Makes 8 servings(1/2 cup each) – 126 calories, 1 gm fat, 24 gm carbohydrates.
