Crunchy Fruit Bake
Recipe from St. Mary’s Health System "Eat Hearty" Recipe Book
Ingredients:
- 3 cups fresh peaches, peeled and sliced
- 2 TBSP brown sugar
- 2 TBSP cornstarch
- 1/4 tsp ground cinnamon
- 1/2 cup bite-sized shredded wheat biscuits
- 2 TBSP brown sugar
- 1 TBSP Country Crock margarine, melted
- optional: Stonyfield vanilla yogurt
Directions:
- Mix together peaches, 2 TBSP brown sugar, corn starch and cinnamon in mixing bowl and then transfer to a casserole dish.
- Cover with aluminum foil and bake at 350 degrees for 20 minutes. Remove from oven and stir.
- Prepare crumb topping by putting wheat biscuits in plastic bag and crushing.
- Stir together crushed biscuits, 2 TBSP brown sugar and margarine in small bowl.
- Sprinkle crumb topping over fruit mixture.
- Bake, uncovered, for 20-25 minutes or until mixture is bubbly around edges.
- Cool slightly and top with chilled vanilla yogurt if desired.
Makes 4 servings: 163 calories, 3 gm fat, 34 gm carbohydrates
