Crunchy Fruit Bake

Recipe from St. Mary’s Health System "Eat Hearty" Recipe Book

Ingredients:

  • 3 cups fresh peaches, peeled and sliced
  • 2 TBSP brown sugar
  • 2 TBSP cornstarch
  • 1/4 tsp ground cinnamon
  • 1/2 cup bite-sized shredded wheat biscuits
  • 2 TBSP brown sugar
  • 1 TBSP Country Crock margarine, melted
  • optional: Stonyfield vanilla yogurt

Directions:

  1. Mix together peaches, 2 TBSP brown sugar, corn starch and cinnamon in mixing bowl and then transfer to a casserole dish.
  2. Cover with aluminum foil and bake at 350 degrees for 20 minutes. Remove from oven and stir.
  3. Prepare crumb topping by putting wheat biscuits in plastic bag and crushing.
  4. Stir together crushed biscuits, 2 TBSP brown sugar and margarine in small bowl.
  5. Sprinkle crumb topping over fruit mixture.
  6. Bake, uncovered, for 20-25 minutes or until mixture is bubbly around edges.
  7. Cool slightly and top with chilled vanilla yogurt if desired.

Makes 4 servings: 163 calories, 3 gm fat, 34 gm carbohydrates
