Apples Stuffed with Prunes

Apples Stuffed with Prunes

Here is a quick winter-time dessert that can be made in less than 20 minutes - full of fiber with no fat and only a small amount of sweetener!

Ingredients:

  • 4 McIntosh or Pink Lady apples (large)
  • 1 teaspoon fresh lemon juice or Borden RealLemon Juice
  • 1/4 cup Sunsweet Pitted Prunes, finely chopped
  • 1 Tablespoon ground walnuts
  • 1 teaspoon Honey
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup Orange or Apple juice

Directions:

Core the apples and remove about 1" of the peel from around the tops. Rub the exposed surfaces with the lemon juice. Prick the skins in several places with a fork to keep the apples from bursting. In a small bowl, combine the prunes, walnuts, honey and cinnamon. Divide the mixture among the apples, stuffing it into the cored areas. Arrange the apples in a 3-quart casserole dish. Add the orange or apple juice to the casserole. Cover with vented plastic wrap. Microwave on high for 4 minutes. Give the dish a half turn and microwave on high for 3 minutes or until the apples are tender and easily pierced with a sharp knife.

Makes 4 servings
