Grilled Tomatillo Salsa

Ingredients:

  • 1 pound tomatillos, husks removed
  • 1 cup diced plum tomatoes
  • 1/4 cup chopped cilantro (plus additional)
  • 1/4 cup finely chopped red onion
  • 1-1/2 TBSP red wine vinegar
  • 1 TBSP olive oil
  • 1/4 tsp salt
  • freshly ground black pepper

Directions:

Dressing: Combine vinegar, olive oil, salt and pepper in a lid with a jar and shake to combine.

Grill tomatillos over medium heat for 3 to 5 minutes, turning until all sides are lightly charred but tomatillos are still firm. Remove from heat and cut into pieces. Combine in a bowl with tomatoes, cilantro and onion and pour dressing over salsa mixture.
