Summertime Salsa
Ingredients:
- peach or mango (ripe)
- 1/2 avocado (ripe)
- 1 banana
- 4 large, ripe strawberries
- 1 kiwi
- 1/2 cup fresh pineapple
- 1/4 cup red onion, chopped
- 2 tbsp fresh ginger
- 1 tsp Bertolli light tasting olive oil
- 2 tbsp lime juice
Directions:
Cut all items into small pieces. (Hint: use garlic press to get fine pieces of ginger). Mix with olive oil and lime juice. Let stand, covered, in refrigerator for 1 - 2 hours.
