Cinnamon-Apple Chex® Mix (1/2 Recipe)

Makes:8 servings (1/2 cup each)

Ingredients:

  • 2 1/2 cups Wheat Chex® cereal
  • 1/2 cup lightly salted whole almonds
  • 2 tablespoons butter or margarine
  • 3 tablespoons packed brown sugar
  • 1 tablespoon light corn syrup
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped dried apples
  • 1/4 cup vanilla yogurt-covered raisins

Preparation Directions:

  1. In medium microwavable bowl, mix cereal and almonds.
  2. In microwavable measuring cup, microwave butter, brown sugar, corn syrup and cinnamon uncovered on High 45 to 60 seconds, stirring halfway through microwave time, until mixture is boiling; stir. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High 2 minutes, stirring and scraping bowl after 1 minute. Stir in apples; microwave uncovered on High about 1 minute or until apples just begin to brown on edges.
  3. Spread on waxed paper or foil to cool, about 15 minutes. Place in serving bowl; stir in yogurt-covered raisins. Store in airtight container. Oven Directions: Heat oven to 300°F. In ungreased 13x9-inch pan, mix cereal and almonds. In 1-quart saucepan, heat butter, brown sugar, corn syrup and cinnamon to boiling over medium heat, stirring frequently. Pour over cereal mixture, stirring until evenly coated.
  4. Bake 15 minutes. Stir in apples; bake an additional 15 minutes. Spread on waxed paper or foil to cool, about 15 minutes. Place in serving bowl; stir in yogurt-covered raisins. Store in airtight container.
