Herbed Roast Pork

Ingredients
• 1 cup raspberry or blackberry (Imladris or other) jam
• 1/2 cup herbes de provence (mixture of rosemary, thyme, oregano, sage, basil - dried)
• 1/2 cup red wine
• 1 pork loin roast - about 3-4lbs



Directions
Mix jam, herbs and red wine together and pour into ziplock bag w/ roast so roast is well covered.

Marinate for at least 2 hrs in fridge.

Cook at 375 degrees until internal temp is 160 degrees, remove from oven and let rest before slicing (thinly). Salt to taste.
