Amount: 4 salmon steaks
Marinade/Grilling sauce:
Ingredients
• 1 tsp each of sesame oill, rice vinegar, low sodium soy sauce, fresh orange juice or pineapple juice
• 1/4 tsp red pepper flakes
• 1 clove garlic, minced
• 1/4 tsp sea or kosher salt
• 1/4 tsp fresh ginger
• 1/4 cup brown sugar
Preheat oven or grill:
Mix together all sauce ingredients. Tear 4 separate squares of heavy aluminum foil and lay fish in center. Brush steaks with sauce. Make a pouch by folding aluminum foil into secure packet - but not wrapped tightly around fish.
Cook fish in grill for approximately 10minutes or oven for approximately 15 minutes. Remove from oven and let cool for about 5 minutes before serving.
Make up your sauce for about 4 medium sized filets (doesn't matter if they are steak cut or not) with ( one tsp each of: sesame oil, rice vinegar, low sodium soy sauce, fresh oj (or pineapple juice) + 1/4 tsp red pepper flakes, 1 clove garlic, 1/4 tsp sea or kosher salt, 1/4 tsp fresh ginger, 1/4 cup brown sugar) Put salmon in center of sturdy square of aluminum foil, brush both sides with sauce. Top with 3 or 4 fresh basil leaves and then roll aluminum foil up into a sealed - but not tight pouch. Put pouches on baking sheet. Cook in 375-400 degree oven for about 15 minutes. Remove from oven and let cool for about 5 minutes before unfolding. Serve with brown rice and julienne cut steamed yellow squash and zucchini
