Pistachio Fruit Bar

Ingredients
• 1/4 shelled pistachios
• 1/4 pecan halves
• 1/4 quick (not instant) oatmeal
• 1/2 stick (4 TBSP) light butter, melted
• 3/4 cup white wheat or all purpose flour
• 1/4 quick oatmeal
• 1 cup all fruit jam OR 1 cup of Imladris jam
• Optional: dark chocolate - melted

Directions
Preheat oven to 350degrees. Put pistachios, peans and oatmeal into food processor and food process until coarse. Spread on pie plate. Mix flour and oatmeal together and add in melted butter. Mix until it becomes crumbly and then will stick together when squeeezed. Line 8" baking pan with aluminun foil so it overlaps sides. Spray with non-stick spray. Press dough into bottom of pan so it forms a crust. Put this pan and the pie plate with nuts/oatmeal in the oven. Let nut/oatmeal mix "toast" for about 7 minutes and then remove from oven.

Continue cooking crust for a total of 20 minutes until golden brown. Remove from oven and sprad with jam. Top jam with nut/oatmeal mixture and return to oven for 20 minutes and bake until it is bubbly. Remove from heat and let cool to room temperature.

Optional: drizzle with melted dark chocolate.
