Ingredients/Sauce Ingredients
• 2 cups of peeled and cubed (approx 2") butternut squash
• Get the pre-cubed butternut squash - or if really ambitious buy whole and peel it.
• 6 slices bacon (use organic or lean/reduced fat bacon)
• 1/3 cup maple syrup
• 1 tsp chipotle pepper
Directions
Cut bacon strips in half and then in 1/2 again length-wise. Wrap bacon around a cube of squash and thread onto a kebab skewer or w/ a toothpick.
Make up glaze by mixing syrup with chipotle pepper and drizzle over skewers.
Bake in pre-heated over at 325 degrees - slow cooking best - for about 30-40 minutes until squash is soft but not mushy and bacon is crispy.
