What are manufacturers putting into products to lower the amount of carbohydrates?

Sugar alcohols (polyols) are being used as sweeteners instead of sugar in products like lower carbohydrate ICE CREAM. You might also find sucralose or SPLENDA being used instead of sugar since it has no calories. Cereals and breads often have more fiber added and soy flour is being used instead of wheat flower because it has fewer carbohydrates and more protein. Other things that are being added are water and natural gums like locust bean gums which provide soluble fiber.
